How Safe is Your Chicken?

Consumer Reports recently tested 382 chickens purchased from more than 100 stores. The results may shock you…

62% were contaminated with Campylobacter, 14% had Salmonella, and 9% had both. Only 34% were clear of both pathogens. Will buying organic chicken help? None of the organic samples contained Salmonella, however 57% had Campylobacter (Consumer Reports, January, 2010).

The obvious lesson here is to thoroughly cook all poultry to 165 deg. F (74 deg. C) or more and disinfect any surface that the uncooked bird had touched.

Could pneumococcus be the real culprit?

Study shows high correlation between severity of H1N1 when coinfected with S. pneumoniae .

A recent study from Columbia University of New York examined the reasons why H1N1 infections in Argentina had a high fatality rate of 4.5%, when the rest of the world averaged only 0.6%.  By testing nasopharyngeal swabs for pathogens in addition to the H1N1 virus, it was found that 56% of the severe or fatal cases contained Streptococcus pneumoniae , whereas only 25% of the mild cases had coinfections of the pneumococcal bacteria. This study alerts physicians to be wary of streptococcal infections secondary to influenzae. Ref.
